Consul General and First Secretary Aian A. Caringal met with Rejoice Thomson, pastry chef and owner of Dovetail on Overend, a much-loved café in Norman Park in Brisbane, on 14 September 2019. In 2014 and 2015, Dovetail on Overend was named by Beanhunter in the Top 10 Cafes in Australia, and the cafe has been featured in numerous publications (newspapers, magazines), on TV, and the internet. Rejoice has incorporated a Filipino twist in her breakfast menu and gluten-free desserts. The Adobo Bowl is now a regular part of Dovetail’s menu after popular demand. She is passionate in raising awareness for Coeliacs. Rejoice was one of the Filipino-Australian women featured by the Philippine Embassy during National Women’s Month in March 2019. END
